Ingredients
For Creamy vanilla ice cream:
- 1 vanilla bean (or 1 tbsp vanilla extract)
- 1 ½ cups whole milk
- 1 ½ cups heavy cream
- ½ cup granulated sugar (or maple syrup)
- ¼ tsp salt
- 2 tbsp milk powder (optional, improves creaminess)
- ¼ tsp xanthan gum (optional, improves texture)
Steps for Making
- Split vanilla bean, scrape seeds, and place in saucepan with pods.
- Add milk, cream, sugar, and salt. Heat gently, stirring until sugar dissolves. Do not simmer.
- Remove from heat, chill mixture (2–24 hrs for best flavor).
- Remove vanilla pods, churn mixture in ice cream maker.
- Serve immediately or store in shallow container with parchment pressed on top to prevent ice crystals.
- To scoop later, dip scoop in cold water before serving.
