Ingredients
For Chicken Calzone:
- 500g minced chicken (use minced thigh for a juicier, less dry result, or minced breast if you prefer leaner and don’t mind it being slightly firmer)
- 1–2 tsp Vegeta
- 1 tsp paprika
- 1 tsp Moroccan spice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1½–2 cups shredded mozzarella
- Sliced salami
- 2–3 tbsp grated Parmesan
- 2–3 cloves garlic, minced
- 300ml thickened cream
- 1 tbsp gravy powder
- 3 tbsp water
Steps for Making
- Preheat oven to 200°C fan forced
- Place the minced chicken directly onto the baking paper and press it down into a large, even circle about 1 cm thick.
- Sprinkle spices evenly over the surface. Press into the chicken so they adhere properly.
- Add a generous layer of mozzarella onto the lower half. Add salami slices over the cheese.
- Using the baking paper to lift, carefully fold the top half over to form a half-moon shape.
- Sprinkle Parmesan over the top and press in gently
- Bake for 40–45 minutes, or until golden and cooked through.
- In a small saucepan over medium heat, saute the minced garlic for 30–60 seconds until fragrant. Do not let it brown.
- Pour in the thickened cream and bring it to a gentle boil.
- Reduce the heat and let it simmer for a few minutes.
- In a small bowl, dissolve the gravy powder in water until smooth.
- Pour the gravy mixture into the sauce and stir until it thickens. Add vegeta to taste
- Finish with freshly chopped chives and stir through.
