Ingredients

For Harira Soup

  • 2 tbsp Olive oil
  • 1 large Onion, diced
  • 2 stalks Celery, chopped
  • 4 cloves Garlic cloves, minced
  • 1 ½ tsp Ground ginger
  • ½ tsp Ground turmeric
  • 1 tsp Ground cumin
  • 1 tsp or 1 stick Ground cinnamon (or cinnamon stick)
  • ½ tsp Black pepper
  • ¼–½ tsp Cayenne pepper (optional)
  • tiny pinch Saffron (optional)
  • 6 cups Broth or water
  • 28 oz Canned tomatoes
  • ½ cup Red lentils (dry)
  • ½ cup Brown or green lentils (dry)
  • ~1½ cups Chickpeas (cooked/drained)
  • ¼ pound Vermicelli/broken capellini or rice
  • ½ cup Fresh cilantro, chopped
  • ½ cup Fresh parsley, chopped
  • 1–2 tsp Honey or date syrup (optional)
  • juice of 1 lemon Lemon juice (to serve)
  • to taste Sea salt

Steps for Making

    Instructions

  1. Prepare the creamy cilantro lime dressing or vegan avocado dressing, and make homemade tortilla strips if desired (see notes).
  2. Place the torn/chopped romaine lettuce into a large mixing bowl (or portion into individual bowls).
  3. Layer on black beans, corn, tomatoes, radishes, pickled onions, and cheese.
  4. Drizzle generously with prepared dressing and toss to combine.
  5. Serve with lime wedges, extra dressing, fresh cilantro, and tortilla chips or strips (either crushed or left whole for guests to crush themselves).
