Ingredients

For Lasagne Soup Recipe

  • 1 kg extra lean beef mince
  • 1 large onion, diced
  • 1 tsp olive oil
  • 1 tbsp minced garlic
  • 1 bottle passata (700g)
  • 140g tomato paste
  • 1 whole packet lasagne sheets (250g), broken into pieces
  • 3 cups water + 1 tbsp Vegeta dissolved
  • 50g mozzarella cheese
  • 250g high-protein cottage cheese
  • black pepper
  • white pepper
  • garlic powder
  • paprika
  • Italian herbs
  • salt to taste

Steps for Making

    Instructions

  1. In a large pot, heat 1 tsp olive oil and sauté the diced onion, then add the minced garlic and cook until fragrant
  2. Add the beef mince and cook until browned, breaking it up as it cooks
  3. Season with black pepper, white pepper, garlic powder, paprika, Italian herbs and salt to taste
  4. Pour in the passata, tomato paste and the 3 cups of water with Vegeta dissolved. Mix everything together
  5. Add the broken lasagne pieces, stir, then place the lid on and simmer for 15 minutes or until the pasta is cooked
  6. Stir through the blended cottage cheese and mozzarella until melted and creamy
  7. Taste and adjust seasoning if needed, then serve hot
