Ingredients
For Lasagne Soup Recipe
- 1 kg extra lean beef mince
- 1 large onion, diced
- 1 tsp olive oil
- 1 tbsp minced garlic
- 1 bottle passata (700g)
- 140g tomato paste
- 1 whole packet lasagne sheets (250g), broken into pieces
- 3 cups water + 1 tbsp Vegeta dissolved
- 50g mozzarella cheese
- 250g high-protein cottage cheese
- black pepper
- white pepper
- garlic powder
- paprika
- Italian herbs
- salt to taste
Steps for Making
- In a large pot, heat 1 tsp olive oil and sauté the diced onion, then add the minced garlic and cook until fragrant
- Add the beef mince and cook until browned, breaking it up as it cooks
- Season with black pepper, white pepper, garlic powder, paprika, Italian herbs and salt to taste
- Pour in the passata, tomato paste and the 3 cups of water with Vegeta dissolved. Mix everything together
- Add the broken lasagne pieces, stir, then place the lid on and simmer for 15 minutes or until the pasta is cooked
- Stir through the blended cottage cheese and mozzarella until melted and creamy
- Taste and adjust seasoning if needed, then serve hot
