Mediterranean Spiced Lamb Lettuce Wraps
Ingredients
For Mediterranean Spiced Lamb Lettuce Wraps
- 500 g ground lamb
- ¼ cup roasted almonds (instead of pine nuts)
- ½ small red onion, roughly chopped
- 3 garlic cloves, minced
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- 1 teaspoon sea salt
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika (for depth)
- ½ teaspoon ground coriander
- ½ teaspoon cinnamon (instead of allspice, adds warmth)
- Pinch of chili flakes or Aleppo pepper
- Butter lettuce leaves (or baby gem)
- 2 Lebanese cucumbers, thinly sliced
- Handful of cherry tomatoes, halved
- Yogurt–tahini sauce (or tzatziki)
- Fresh sprouts or microgreens, for garnish
Steps for Making
- Preheat the grill or grill pan to medium-high heat. Lightly oil the grates.
- In a food processor, pulse together almonds, onion, garlic, parsley, and mint until coarsely chopped (not smooth).
- In a mixing bowl, combine ground lamb with salt, cumin, smoked paprika, coriander, cinnamon, and chili flakes. Add the almond–herb mixture and mix gently with damp hands until just combined.
- Shape into 14–16 small patties or oval koftas. Flatten slightly for even cooking.
- Place koftas on the grill. Cook 3–4 minutes per side until grill marks appear and the meat is cooked through. Reduce heat if needed to avoid burning.
- Assemble wraps: place lettuce leaves on a platter. Add cucumber slices and tomatoes, then top with warm lamb koftas. Drizzle with yogurt–tahini sauce and finish with fresh sprouts or microgreens. Serve immediately.
