  • ½ small red onion, roughly chopped
  • 3 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 1 teaspoon sea salt
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (for depth)
  • ½ teaspoon ground coriander
  • ½ teaspoon cinnamon (instead of allspice, adds warmth)

  • Butter lettuce leaves (or baby gem)

Steps for Making

  1. Preheat the grill or grill pan to medium-high heat. Lightly oil the grates.
  2. In a food processor, pulse together almonds, onion, garlic, parsley, and mint until coarsely chopped (not smooth).
  3. In a mixing bowl, combine ground lamb with salt, cumin, smoked paprika, coriander, cinnamon, and chili flakes. Add the almond–herb mixture and mix gently with damp hands until just combined.
  4. Shape into 14–16 small patties or oval koftas. Flatten slightly for even cooking.
  5. Place koftas on the grill. Cook 3–4 minutes per side until grill marks appear and the meat is cooked through. Reduce heat if needed to avoid burning.
