These sweet potato boats have been on repeat in our household!!
Ingredients
For Sweet Potato Boats:
- 1 large sweet potato
- Lean beef mince
- Vegeta, to taste
- Garlic powder, to taste
- Paprika, to taste
- Moroccan spice, to taste
- Salt
- Pepper, to taste
- 1 ripe avocado
- Tomato, finely chopped
- Garlic, minced
- Lemon juice, to taste
- Cheese of choice, grated
- Sour cream
- Chives, optional
Steps for Making
- Wash and dry the sweet potato, pierce all over with a fork, then air fry at 200°C for 1 hour, turning once halfway, until very soft inside.
- Cook the lean beef mince in a pan over medium heat, breaking it up as it cooks, then season with vegeta, garlic powder, paprika, Moroccan spice, salt and pepper to taste.
- In a bowl, mash the avocado and mix with chopped tomato, minced garlic, lemon juice, salt and pepper to taste.
- While the sweet potato is still hot, slice it open lengthwise and gently mash and fluff the sides with a fork.
- Season the mashed interior with salt and pepper.
- Sprinkle cheese inside the potato and allow it to melt from the heat.
- Spoon over the seasoned beef mince.
- Top with guacamole and a dollop of sour cream.
- Garnish with chives if using and serve immediately
